A magnificent parcel of over 2 hectares located on the left bank of the Vienne at Anché, this clay-limestone terroir is truly exceptional for Chenin Blanc. Average yield 35 hl/ha, sometimes less. Harvested in several successive sortings, depending on grape maturity. Pneumatic pressing followed by vinification in 225-liter barrels (1/3 new, 2/3 of one wine or more). Very slow fermentation in a cool cellar (5 to 13°C maximum), revealing the aromas and structure of pure Chenin. Regular stirring of the lees nourishes the wine. After 3 months of fermentation and 4 to 6 months of ageing, the wine is blended in stainless steel tanks for an intimate marriage before bottling. Several months in the cellar complete the maturation of this wine, faithful to its exceptional terroir.
